CELERY
Celery is surprisingly hard to grow. It likes wet soil rich in organic matter. My celery tends to be a kind of
thin and a little short--but the flavor has been good. The leaves are delicious as a celery seasoning that can be added to
soups, rice, casseroles, etc.
Celery is another vegetable that is common enough to need no great explanation. I especially love it for the delicate flavor it adds to soups and I also regularly add it to my tomato sauce. A fun way to introduce kids to world of crunchy, stringy, raw vegetables is by using "ants on a log". Spread some peanut butter in the little curved space on the celery stalk and then have the kids put little raisins in a line on the peanut butter (they are the ants). I think it's kind of gross, but kids like it and will actually eat raw celery--which is sometimes hard to get them to do. |
