CLAYTONIA
Claytonia is also known as miner's lettuce or winter pursalane. It is a mild flavored ingredient to salad mixes that is
especially usefull in the late fall becuase you can harvest it into the winter long after other greens have died off (as long as it's not buried in the snow!). I will
will only distribute this in salad mix when it's available in the early spring and late fall. But it can also be cooked
in stir fries and soups like other greens--though it only needs to be cooked very lightly, so add it at the very
end. It also makes an attractive garnish because of it's unique shaped leaves that look like little umbrellas.
