MINT
Mint is pretty much available from the garden all season long. If you want some and it's not offered in the
current share, just ask and I can probably pick some for you. It grows like a weed and comes back year after year. In fact,
because of its vigorous and invasive growth, I keep it in a special spot under an apple tree where it can't invade other parts of the garden.
If used in small quantities, mint adds a taste of "freshness" to whatever you are making. It's also commonly
used to flavor herbal tea. Add a sprig to your cup the next time you make a cup of tea and see how it tastes! See the cucumber page for a

FAVORITE RECIPES: Lassi (Indian Yogurt Mint Drink) 1 quart milk 1 quart yogurt 1/2-3/4 cup sugar or combination of sugar and honey 4 teaspoons vanilla 6-8 fresh mint stalks (lightly bruise leaves and stalks by rolling them in your hands) I actually usually make 1/2 this recipe at a time. Combine all ingredients except the mint and mix well. Immerse mint stalks in the mixture. Let stand in refrigerator at least 5 hours to allow mint flavor to permeate the drink. Remove mint before serving. Linguine With Fresh Herbs 3 tablespoons olive oil 1/2 cup finely chopped red onion 2 teaspoons minced garlic 3/4 cup chicken or veggie broth 1/2 teaspoon salt 1/2 teaspoon crushed red pepper flakes 1/2 cup loosely packed chopped fresh basil leaves 1/3 cup loosely packed chopped fresh mint leaves 1/2 cup loosely packed chopped parsley leaves 3 tablespoons minced fresh thyme 1 pound linguine In a medium sized frying pan, heat 3 tablespoons oil over low heat. Add onion and sauté, stirring frequently, until soft but not brown, about 2 minutes. Add garlic and cook until soft, about 30 seconds. Stir in chicken broth and simmer until heated. Season with salt and red pepper flakes. Transfer mixture to pasta bowl, add fresh herbs, and stir to combine. Cook pasta and drain pasta and then transfer to pasta bowl, and toss with herb mixture. Tastes great with toasted bread crumbs served on top too. |
