SALAD MIX (mesclun)
Our salad mix is an ever changing array of greens that are sure to make you realize that there is much more to a
salad than just lettuce (and there is much more to lettuce than good ol' iceberg). Some of the other greens we grow
for the salad mix include spinach, arugala, mizuna, kale, mustard greens, tatsoi, amaranth, and claytonia. We also include
greens from baby chard, beets, bok choi, and even carrot tops when they are available (mostly when we are thinning the young
seedlings). I try to offer both a spicy and a milder salad mix so you can choose whichever you like best.
Mustard greens are pretty spicy and will only be included in the spicy mix. The spicy mix will also contain
a higher proportion of things that are not lettuce, while the mild mix will have a higher proportion of lettuce. If some of the
specialty greens are doing especially well, I may offer them as bunched greens as well--then you will be free to add them
to the salad mix yourself or reserve them for cooking other special dishes.
Be sure to use some of the fresh herbs offered early in the season to make delicious vinaigrettes for your salad mix! The thyme page has a recipe for one of our favorite vinaigrettes and the cucumber page has a recipe for a creamy dressing. |
